I work really hard to not only be a good photographer, but have a personal connection to my clients and understanding what they want (especially when they might not know). If trying to do pictures in black & white don't shoot them with your cameras bw mode if it has one. Turn it black & white AFTER taken in color, it will give you a better option to turn it after. Plus if you have it in color you can always go backwards. Once you have a picture you want to switch to bw adjust the contrast/brightness to make sure you have some dark blacks & white whites. The worst look for a black & white image is to look gray.
